In this fascinating hamlet in Tuscany, surrounded by beautifully terraced land and breathtaking views, every year in November, extra virgin olive oil becomes the true protagonist of the autumn days. Extra virgin olive oil is a gem of the culinary world, the fruit of the love and care we give to the production of olives on this ancient site. Montestigliano is lucky enough to bear 1500 different olive varieties. This guarantees the production of a product that can be savoured both raw and cooked.

The extra virgin olive oil of Montestigliano, which is sold on our eCommerce site, is the product of at least two of the following varieties: Frantoio, Correggiolo, Leccino e Moraiolo. The olives are picked between October and November by hand or with the aid of machines, and processing must be completed within 72 hours from the harvest. Every single variety is carefully chosen for its peculiarities and, together with the other olive varieties, creates a fine, delicious extra virgin olive oil that is rich in fruity notes.

An enthralling olive harvesting experience

At olive harvesting time, which takes place in the month of November in Montestigliano, the hamlet comes alive. Numerous workers are busy picking the olives with care and attention. The guests of the agriturismo can learn the harvesting techniques and visit the frantoio, the oil mill, where the olives go from olives to oil. It is a unique experience in which to learn the oil-making process that gives birth to this precious nectar.

Oil tasting: A journey amid quality and tradition.

In the less active seasons in the Azienda Agricola, and upon request, our guests can participate in informal oil-tasting with Massimo Donati, the heart and soul of Montestigliano.
Massimo is happy to share his enthusiasm and passion for the land and the olive oil, a passion that was passed down by his grandfather, the man who inspired his love for the production of this culinary treasure. During the oil-tasting, different quality olive oils are compared with that of Montestigliano. This allows one to uncover the subtle hues and peculiarities of each variety.

It gives our guests the chance to immerse themselves in the centuries-old tradition of olive oil and to appreciate the markedly fruity taste, with its spicey notes and the slightly bitter hues―ideal both raw, for seasoning salads and soups, and cooked, for making roasts, stews, and fried foods.
